Do I really need to remove the hood/bonnet in order to remove the engine/trans assembly?
I have a 2-ton engine hoist and the rear end jacked up. In the past I have always removed the hood but was wondering if it is possible to do it with the hood on.

Yes you should.  The angle required to remove the engine and trans with a hoist will have the hoist boom hitting the hood, if left in place.

Though technically you can remove the prop/stay rod and raise the hood to stand vertically, that would very likely damage the paint/bodywork on on the vent cowl with the trailing edges of the hood. 

Loosening the hinges to provide clearance is as much work to readjust later as removing it and can still cause damage if not secured well, so why not just take it off and put it safely out of harms way.
